A combination of a zucchini saute and a yellow squash stir fry, can be modified to include what vegetables you have in your house

Recipe Ingredients for Yellow Squash Saute

2 bacon
1 medium yellow squash, thinly sliced
1/2 medium onion, thinly sliced
1 jalapeno pepper, chopped (optional)
1 red bell pepper
1 dash soy sauce
1 pepper to taste
2 tbsp uncooked brown rice
1/4 cup water
1 tsp garlic

Recipe Directions for Yellow Squash Saute

Place bacon in a large skillet over medium-high heat. Cook until crisp. Remove bacon from pan, dab off excess grease and set aside. Add the squash, onion, bell pepper, and jalapeno to the skillet. Saute in the bacon drippings until tender, but still firm, stirring frequently. drain excess grease. Stir in rice and water. Cover, and simmer over low heat for 20 minutes. Crumble bacon into the skillet, and season with soy sauce, and pepper. Stir, to blend in seasonings, and serve.
