Recipe Ingredients for Yellow Squash & Chicken Casserole

3 pounds yellow squash, chopped
1 onion, chopped
4 tablespoons margarine
1 cup half and half
8 ounces sharp cheddar cheese, cubed
2 tablespoons flour
1/2 teaspoon salt
3 chicken breasts, cubed, cooked

Recipe Directions for Yellow Squash & Chicken Casserole

  1. Directions

  2. Preheat oven to 350 degrees F (175 degrees C).

  3. In a large pot of salted water, boil squash and onions until tender.

  4. In a saucepan, combine margarine and half & half; stir constantly over a low heat. Mix in cheese, flour, salt and pepper. Stir until sauce thickens.

  5. Place squash and onions in a 2-quart baking dish. Mix in chicken and cheese sauce.

  6. Bake uncovered for 20 to 30 minutes or until hot.
