Just a touch of heat with green chilies spice up this side dish. I like to blend the cottage cheese with 1 T lemon juice and 2 T skim milk to make it smooth. If you need more moisture while sauteing the vegetables, just add a splash of broth.

Recipe Ingredients for Yellow Squash Casserole

1 1/2 lb yellow squash
1/2 medium onion
1 T olive oil
1/4 t. pepper
1/2 t. salt
2 T green chilies
1 T corn starch
1 cup monterey jack cheese
1 egg
1 cup cottage cheese
1/2 c parmesan cheese

Recipe Directions for Yellow Squash Casserole

  1. Saute diced squash and onion in olive oil.

  2. Add pepper, salt, chilies and corn starch.

  3. Mix well.

  4. Spray casserole dish with cooking spray and place squash mixture in dish.

  5. Sprinkle monterey jack cheese on top.

  6. Combine egg and cottage cheese.

  7. Pour over the monterey jack cheese, then sprinkle with parmesan.

  8. bake at 400 degrees for 25-30 minutes.
