Curried lentils cooked with salt, turmeric, cayenne peppers and a fusion of cumin and mustard.

Recipe Ingredients for Yellow splt pea and Squash

4 cup yellow squash
1 cup dry split pea - yellow
2 small diced tomato
2 tbsp vegetable oil
1/4 teaspoon cumin seeds
1/4 teaspoon mustard seed
1 teaspoon salt
1/4 teaspoon Turmeric
1/2 teaspoon cayenne pepper
2 cups water

Recipe Directions for Yellow splt pea and Squash

  1. Soak split peas for about 2 hours or until soft

  2. In a skillet heat oil and add cumin, mustard, turmeric, and cayenne pepper.

  3. Immediately add tomatoes, squash and split peas.

  4. Ad water and bring to a boil

  5. Simmer and let cook for 30 minutes.

  6. Serve with Indian whole wheat bread or rice.
