Yellow split peas cooked with shallot and cumin

Recipe Ingredients for Yellow split peas

500 g yellow split pea
40 g olive oil
140 g shallot
100 g water
5 g salt
10 g cumin

Recipe Directions for Yellow split peas

  1. Soak YSP until tender (overnight)

  2. Boil 30-40 minutes or until done

  3. Caramelize shallot in olive oil, add cumin, salt

  4. Add YSP

  5. Add 200ml vegetable stock or water.

  6. Reduce until desired consistency; add more water or stock if needed.
