Recipe Ingredients for Yellow Split Pea Soup

2 c. Organics Split Yellow Peas Dry
1 tsp olive oil
3 carrots
1/2 onion
3 celery sticks
6 c. Organic Vegetable Broth
6 c. Kale, chopped
1 Russet Potatoes
1/2 finely diced red bell pepper
1/4 tsp. thyme
1 dash cayenne pepper, if desired
1 freshly ground black pepper, to taste
1 salt, to taste

Recipe Directions for Yellow Split Pea Soup

  1. Wash yellow split peas until water runs clear.

  2. Cover with fresh water & bring to boil. Boil for 2 minutes.

  3. Cover pot and leave to soak for at least 1 hour. Drain and rinse thoroughly.

  4. Bring vegetable stock and peas to a boil, then simmer until peas begin to break down.

  5. Add herbs and spices.

  6. While peas are cooking, saute onions, celery and red bell pepper in olive oil.

  7. When peas have begun to break down, add diced russet potato and sauteed vegetables.

  8. Cook until potato is tender and to desired pea-breakdownedness.

  9. Add chopped kale about 5 minutes before serving.

  10. I also like this with a few dashes of cumin.
