Recipe Ingredients for Yellow Split Pea & Red Lentil Soup

1 1/2 cup, chopped Onions
2 medium Carrots
2 clove Garlic
4 stalk, medium (7-1/2" - 8" long) Celery
2 tbsp Vegetable Oil, Canola
15 grams Vegeta Gourmet Seasoning
1 cup Organics Split Yellow Peas Dry
1 cup Organics Red Lentils
2 tsp, crumbled Bay Leaf
1 tbsp Curry Powder
1/2 tsp Turmeric, Ground
1 tsp Ginger, Ground
1 tsp Nutmeg, Ground
7 cup (8 fl oz) Water

Recipe Directions for Yellow Split Pea & Red Lentil Soup

  1. ? 2 tablespoons olive oil

  2. ? 1 cup finely chopped onion

  3. ? 2 medium carrots, peeled and diced

  4. ? 2 to 3 cloves garlic, crushed or minced

  5. ? 8 cups water

  6. ? 2 vegetable bouillon cubes

  7. ? 1 pound dried yellow split peas or red lentils, rinsed

  8. ? 1/3 cup raw brown rice or barley, rinsed

  9. ? 2 bay leaves

  10. ? 1 tablespoon good-quality curry powder, more or less to taste

  11. ? 1/2 teaspoon turmeric

  12. ? 1 teaspoon grated fresh ginger

  13. ? Pinch of nutmeg

  14. ? Salt and freshly ground pepper to taste

  15. Heat the oil in a soup pot. Add the onion and sauté over medium-low heat until golden.

  16. Add all the remaining ingredients except the salt and pepper. Bring to a rapid simmer, then lower the heat. Cover and simmer gently until the peas are mushy, about 1 1/2 hours, stirring occasionally.

  17. When the peas are done, adjust the consistency with more water as needed, then season with salt and pepper. Discard the bay leaves and serve. This soup thickens considerably as it stands; thin with additional water as needed and adjust the seasonings.
