Easy and full of flavor, kind of like a risotto.

Recipe Ingredients for Yellow Rice & Veggies

1 tbsp olive oil
5 oz Mahatma Spicy saffron Yellow Rice Mix
1 yellow onion, diced
1 cup carrot, chopped fine
1 red bell pepper, dicecd
1 cup summer squash
3 cups water
1 tbsp chicken boullion
3 oz ground beef
2 oz mozzarella

Recipe Directions for Yellow Rice & Veggies

  1. Heat chicken stock to a simmer in a pot.

  2. Melt smart balance in a large pot over medium heat.

  3. Add onion and carrots, cook until onion is translucent - about five minutes.

  4. Add bell pepper and cook for 1 minute.

  5. Add rice mix and stir to coat with oil. Add a half teaspoon more smart balance, if necessary.

  6. Add a cup of chicken stock and bring to a slow boil, stirring constantly. When it is almost - but not completely - absorbed, add another cup. Repeat until all chicken stock has been added. If the rice is not done, you can add a cup of hot water. Remember to stir almost constantly!

  7. When the rice is done, add the spinach and throroughly mix into the rice. Turn off the heat, but continue to cook until the spinich is wilted.

  8. Serve as a side dish for 4 or a main meal for 2-3.
