Stuffed peppers with Vigo yellow rice

Recipe Ingredients for Yellow Rice Stuffed Peppers

4 large green peppers
10 oz VIGO YELLOW RICE
2 tbs Olive Oil
1/3 cup chopped onions
1 lb. ground beef
8 oz can tomato sauce

Recipe Directions for Yellow Rice Stuffed Peppers

Cut a slice from the stem end of each pepper, and clean out the seeds and pith. Blanche (by placing peppers in one inch boiling water) for 3-4 minutes. Remove the peppers from boiling water and set aside. Prepare a Vigo Yellow Rice Dinner according to the directions on the package. Meanwhile, in another saucepan, saute onions in heated oil or butter. When the onions are opaque, add the meat, salt and pepper and cook until the meat is browned. Remove from heat, drain off any excess liquid, and stir in the tomato sauce. When the rice is cooked, add it to the meat mixture and blend well. Stuff each pepper with the mixture and place in a large baking dish. As an option,place a slice of your favorite cheese. Top with strips of roasted peppers. Bake in 350 degree oven for 10-15 minutes.
