Recipe Ingredients for Yellow Pepper Soup

3 yellow peppers, chopped
2 fennel bulbs, chopped
1 onion, chopped
1 carrot, chopped
1 potato, chopped
1 quart chicken broth, low-salt
1 salt and pepper

Recipe Directions for Yellow Pepper Soup

  1. Combine chopped vegetables with broth and wine (or water) and bring to a boil. Cook at a simmer for about 20 minutes, until vegetables are tender.

  2. Blend in a food processor until smooth. You may need to add some broth or water if the mixture is too thick.
