Recipe Ingredients for Yellow Pea soup with apricots

12 oz Peas (Split Yellow)
0.33 tbsp Extra Virgin Olive Oil
0.67 medium raw Onion Yellow
2 clove Garlic
4 oz Dried Turkish Apricots
3.5 serving Natural Foods - Organic Vegetable Broth
1 cup Tomato
1 cup diced raw Tomato
1 tsp Cumin
0.5 Teaspoon Thyme
1 tsp Pepper, Black
1/3 cup sliced Jalapeno Pepper
6 Teaspoon Juice

Recipe Directions for Yellow Pea soup with apricots

  1. Sute the onion and garlic. Add diced tomato and jalapeno pepper.

  2. Add peas, apricots, broth and bring to a boil

  3. Reduce heat and simmer for about 30 minutes

  4. Add Marinara sauce, Cumin, thyme and pepper. Simmer for 10 minutes

  5. Add lemon juice and put half of the soup in a blender
