Recipe Ingredients for Yellow Curry w/ Chicken

4 Boneless, Skinless Chicken Breast
1 Bell pepper (Yellow)
2 Bell pepper (Orange)
1 Bell pepper (Red)
1 Yellow Onion
3 Carrots
1 clove garlic
2 tsp Olive Oil
20 oz Lite Coconut Milk
2 cans Chicken Broth
1 tbsp Curry Powder
1 tbsp Red Curry Paste
1 tbsp Soy Sauce
1 tsp red pepper flakes
2 tbsp Corn Starch
1 Red Pepper to taste

Recipe Directions for Yellow Curry w/ Chicken

  1. Cut chicken into bite size pieces

  2. Brown chicken in pan with olive oil and garlic

  3. Cut all vegetable into bite size pieces

  4. Remove chicken from pan and add vegetable, saute until slightly soft

  5. Mix coconut milk, chicken broth, pepper flakes, cornstarch, and soy sauce in bowl

  6. Combine all ingrediants and cook on high heat until thick and bubbly

  7. Reduce heat and let cook at a simmer for 10-15 minutes

  8. May be served over rice
