I found this recipe on allrecipes.com (http://allrecipes.com/Recipe/Scottleys-Basic-Yellow-Cake/Detail.aspx) to use in brownie cupcakes I also found on that site (http://allrecipes.com/Recipe/Brownie-Batter--Cupcake--The-SECOND-BEST-Cupcake-Ever/Detail.aspx). I made this cake mix, and then just took a boxed brownie mix, made it, chilled the brownie mix in the freezer, and chilled the cake mix in the refrigerator. Then I sprayed some cupcake pans, pre-heated the oven to 350, lined the muffin cups (use liners if you have them!) with yellow cake mix, and dropped a dollop of brownie mix in the center. Then I covered the top with more yellow cake mix and popped them in the oven for about 20 minutes. Yum!

Recipe Ingredients for Yellow Cake (Calorie count for cupcakes)

1 cup butter, softened
1 2/3 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 3/4 cups flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1 1/3 cups milk

Recipe Directions for Yellow Cake (Calorie count for cupcakes)

  1. 1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour cake pans or put into muffin cups!

  2. 2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Sift together the flour, baking powder, and salt. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Pour batter into prepared pans.

  3. 3. Bake in preheated oven for 40 to 45 minutes (20 to 25 for cupcakes- the cakes will be spongy on top, golden brown on the edges, and spring back when touched), or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
