If possible, use fresh sweet potatoes. If using a baking stone, preheat the stone in the oven for 10 minutes.

Recipe Ingredients for Yankee Sweet-Potato Biscuits

2 cups flour
1 tbsp baking powder
1/2 tsp salt
1 tsp pumpkin pie spice
1/4 cup margarine
1 tbsp orange zest
1 tbsp lemon zest
2 tbsp Agave syrup
1 cup mashed sweet potato
1/2 cup 1% milk

Recipe Directions for Yankee Sweet-Potato Biscuits

  1. Preheat oven to 400 degrees. Lightly coat baking sheet with vegetable oil and set aside.

  2. In a large bowl, combine the flour, baking powder and salt and spice. Using a pastry blender or two knives, cut the margarine into the flour mixture until it resembles small peas. Add the orange zest, lemon zest, agave and sweet potato. Mix thoroughly. Add enough mild to form a soft, manageable dough.

  3. Turn the dough out onto a lightly floured surface and knead 2 or 3 times. Using floured hands, pat the dough to a 1-inch thickness. Using a floured biscuit cutter or glass, cut out 16 biscuits and place them on the baking sheet.

  4. Place the biscuit in the oven and bake until light golden brown (20 to 24 minutes)
