Recipe Ingredients for Yankee Pot Roast Soup

1 pound cooked beef
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon garlic, minced
1 tablespoon butter
2 medium carrots, cut into bite size pieces
4 red potatoes, cut into bite size pieces
1/2 quart chicken broth
1/2 quart beef broth
8 ounce tomato sauce

Recipe Directions for Yankee Pot Roast Soup

  1. Cut leftover roast into bite size pieces. Melt butter and sear the meat over high heat.

  2. Reduce to simmer, add remaining ingredients and cook until carrots and potatoes are tender - 30 to 40 minutes.
