Yam Risotto Recipe

a bit of a rush job but quite tasty. Sodium is out of wack because I couldn't get it not to be putting boullion in. I used stock my husband made - NO SALT!!!

Recipe Ingredients for yam risotto

2 cups arborio rice
1 1/2 l chicken stock, no salt
1/2 cup parmesan, grated
1/4 cup parsley
2 cup yam, mashed
1 tsp salt
1 tsp pepper
1 onion, large
3 cloves garlic
2 tsp vegetable oil

Recipe Directions for yam risotto

  1. steam and mash yams

  2. saute onion and garlic in oil

  3. when almost transluscent add rice

  4. saute for 2-3 mins

  5. add one cup of warmed stock and simmer until absorbed

  6. do not stir much, just jiggle the pan

  7. keep adding warm stock 1 cup at a time until rice is soft

  8. remove from heat

  9. add yam mash, parmesan and parsely

  10. eat
