great biscuits to go with pot roast or clam chowder. Use Lemon, orange or Grapefruit zest. Makes 24 biscuits Can half the recipe if you prefer.

Recipe Ingredients for Yam and Honey Biscuits

1 1/2 cups yam, mashed
2/3 cup honey
1 tablespoon orange zest
4 cups all purpose flour
2 tablespoons baking powder
1 teaspoon salt
1/2 cup butter

Recipe Directions for Yam and Honey Biscuits

  1. Preheat oven to 400F

  2. Peel and roughly cube yam. Bol to soften or roast if you prefer. Drain and put back in pot. Add honey and zest and mash together. Set aside.

  3. In a large bowl, mix together flour, baking powder and salt. Cut in butter until crumbly.

  4. Add warm yam and honey mixture and mix well. The warm yam mix will soften the butter making it easier to mix. Knead only a couple times after dough has come together.

  5. Flatten the dough out on the counter with your hands to about 1/2 inch thick and cut out with biscuit or cookie cutter. Alternatively roll dough into balls and flatten to 1/2 inch thick. Place on ungreased cookie sheet.

  6. Bake in oven for 12-18 minutes until slightly browned on the bottom.
