This recipe is from the 500 Greatest-Ever Chicken Recipes cookbook, p215. When we made it this time, we substituted a few things: the onions used should be spring onions instead of regular onions. If you have sake, use that instead of dry white wine. Also, ideally your soy sauce should be a Japanese brand. "These Japanese-style kebabs are easy to eat and ideal for barbecues or parties. Make extra yakitori sauce if you would like to serve it with the kebabs. For an authentic touch, serve the kebabs with shichimi - seven-spice flavour, usually made from ground chilli, anise pepper, sesame seeds, rape seeds, poppy seeds, dried citrus peel and ground nori seaweed. Cook's Tip: There are several types of Japanese soy sauce - shoyu. Tamari is a thick, mellow-flavoured sauce that is a popular choice for dips. Usukuchi is lighter, but quite salty. Do not substitute Chinese soy sauce, as it is much stronger than Japanese."

6 thigh, bone and skin removed Chicken, Thigh, Meat Only
125 grams Onions
150 grams Soy Sauce
0.5 cup Sugars, Granulated

Recipe Directions for Yakitori Chicken (500 Greatest-Ever Chicken Recipes)

  1. To make the sauce, stir the soy sauce, sugar and sake or wine into the flour in a small saucepan and bring to the boil, stirring. Lower the heat and simmer the mixture for 10 minutes until the sauce is reduced by a third. Set aside.

  2. Cut the chicken into bite-size pieces. Cut the spring onions into 3cm/1-1/4in pieces. Preheat the grill or prepare the barbecue.

  3. Thread the chicken and spring onions alternately on to 12 bamboo skewers. Grill under medium heat or cook on the barbecue for 5-10 minutes until the chicken is cooked but still moist, brushing generously several times with the sauce.

  4. Serve with a little extra yakitori sauce, fofering shichimi with the kebabs if you wish.
