Recipe Ingredients for Xraybeotch's Tex Mex Chicken Fingers

1/3 cup fat-free buttermilk
1 teaspoon lime zest
1 tablespoon lime juice
1/2 cup yellow cornmeal
2 tablespoons cilantro
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon oregano
1/8 teaspoon cayenne
1 pound boneless skinless chicken breast

Recipe Directions for Xraybeotch's Tex Mex Chicken Fingers

  1. Preheat oven to 400

  2. Wisk together Buttermilk lime zest and lime juice.

  3. Seperatly stir together cornmeal cilantro chili powder cumin oregano and cayenne.

  4. Spray a 11 x 7 x 2 baking pan with pam.

  5. Dip the chicken ( cut into stripes) into liquid mix then roll in dry mix shking off the excess.

  6. Place chicken in single layer in baking dish.

  7. Lightly spray chicken with pam.

  8. Bake for 20 - 25 min.

  9. Yummy
