This is a good cake from a WW cookbook my mom gave me. This is 3 pts per serving and great with a little ice cream for 5 total points.

Recipe Ingredients for WW Warm Chocolate-Pudding Cake

3/4 cup flour
3/4 cup granulated sugar
1/3 cup unsweetened cocoa powder
1/4 cup unsweetened cocoa powder
2 tsp baking powder
1 tsp instant coffee powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup lowfat milk (1%)
1 tbsp unsalted butter, melted
1 1/2 tsp vanilla extract
1/3 cup dark brown sugar
1 2/3 cups water, boiling
9 tsp powdered sugar

Recipe Directions for WW Warm Chocolate-Pudding Cake

  1. Preheat oven to 350. Spray a 9 inch square baking pan with PAM.

  2. Combine the flour, sugar, 1/3 cup cocoa powder, baking powder, espresso powder, baking soda and salt in large bowl.

  3. Make a well in the center and pour in the milk, melted butter and vanilla. Stir until just blended; spoon the batter evenly into the pan.

  4. Combine the brown sugar and additional 1/4 cup cocoa powder into a small bowl and add the boiling water to the mixture. Then pour evenly over the top of the batter. DO NOT STIR.

  5. Bake until the top of the pudding is set, about 35 minutes. Cool on a rack at least 30 minutes. Cut into 9 squares and serve with 1 tsp powdered sugar on each serving.
