Recipe Ingredients for WW Shepherd's Pie

1 tbsp margarine
2 tbsp white flour
1 cup chicken broth
1 tsp salt
1 1/4 pound chicken breast
2 1/2 cup frozen mixed vegetables
1 tbsp onion powder
1 tsp dried thyme
1/2 tsp marjoram
2 large russet potatoes
1 tsp paprika

Recipe Directions for WW Shepherd's Pie

  1. Cook and cube chicken breasts

  2. Preheat over to 400 F; spray 2-quart caserole with nonstick cooking spray.

  3. Cook, peel, and mash potatoes.

  4. In a medium nonstick saucepan over medium heat, melt the margarine. Sprinkle with 1 tablspoon of the flour; cook, stirring constantly for 2 minutes. Whisk in the broth and salt; bring to a boil. Reduce heat and simmer, stirring constantly, until thickened, 3-4 minutes.

  5. In a large bowl, combine the chicken and remaining tablespoon of flour. Stir in mixed vegetables, onion powder, thyme, ground marjoram, and sauce. Transfer tot he casserole. Top with mashed potatoes, spreading to cover the filling completely, sprinkle with paprika. Bake until bubbling and the potatoes are golden, 30-35 minutes.
