Recipe Ingredients for WW Scotch Broth

1 1tsp Vegetable Oil, Canola
8 oz Lamb, Cubed For Stew Or Kabob (Leg And Shoulder)
2 medium (2-1/2" dia) Onions
48 oz Chicken 33% Less Sodium Broth Rtsb
3/4 cup Barley
3 carrot (7-1/2") Carrots
1 cup, cubes Rutabagas
1/4 oz Bay Leaves
2 tsp Sea Salt
1/4 tsp Pepper, Black
8 oz Beans, Snap, Green
8 oz Mushrooms

Recipe Directions for WW Scotch Broth

  1. Heat the oil in a nonstick Dutch oven over medium-high heat. Add the lamb and cook, turning occasionally, until browned on all sides, 7-8 minutes. Transfer the lamb to a crock pot or set aside.

  2. Add the onions to the same Dutch oven and cook, stirring occasionally, until golden, 7-10 minutes. Put onions in crock pot with lamb, broth, carrots, turnip/rutabaga, bay leaves, salt, pepper; bring to a boil. Reduce heat and simmer for several hours until lamb is tender (and falls off bone if using cheaper stew bones).

  3. Bring to a boil again and add barley; turn down heat and simmer for 45 minutes. Discard the bay leaves.

  4. Add the green beans and mushrooms to the pot; return to a boil. Reduce the heat and simmer, covered, until the vegetables are tender, 5-10 minutes.
