Recipe Ingredients for WW Mac and Cheese

1/2 lb whole-wheat elbow macaroni
3 tbsp unsalted butter
1 small onion, chopped
2 tbsp flour
2 cups 1% milk
8 oz shreded 2% cheddar cheese
1/3 cup grated parmesan cheese
1/2 tsp salt
1/4 tsp pepper
2 cups (1 14.5 oz can) diced tomatoes (no salt added), with their juice
1/4 cup plain dried bread crumbs

Recipe Directions for WW Mac and Cheese

  1. Preheat oven to 350. Spray 8 1 cup baking dishes with PAM and put onto a baking sheet.

  2. Cook the macaroni according to directions on the package.

  3. Meanwhile, melt 2 tbsp of butter in large saucepan over medium heat. Add onion, cooking for about 5 minutes. Add flour and cook 1 minute. Gradually wisk in milk. Increase the heat and cook, wisking constantly, until slightly thickened, 3-4 minutes. Whisk in both cheese, salt and pepper. Cook, wisking occasionally, until the cheeses melt, about 1 minute.

  4. Remove saucepan from heat and stir in macaroni and tomatoes. Divide the mixture into the baking dishes. Melt remaining butter in small skillet over medium heat. Add the bread crumps and cook stiring constantly until evenly coated about 1 minute. Sprinkle over the dishes and bake until bubbly and tops are golden, about 25 minutes.
