Low calorie chicken tortilla soup

Recipe Ingredients for WW Chicken Tortilla Soup

1 pound chicken
3/4 cup zucchini
3/4 cup cabbage
8 cups chicken broth
1 tsp olive oil
1 cup corn
15 ounce rotel tomatoes
1 tomato
1/2 cup red bell pepper
1/2 cup onion
4 cloves garlic
1 jalapeno pepper
3 tbl chili powder
2 tsp cumin
1/2 tsp cayenne

Recipe Directions for WW Chicken Tortilla Soup

  1. In a large Dutch oven, saute onion, garlic and red pepper until soft, about 4 minutes.

  2. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 15 minutes.

  3. After 15 minutes, remove chicken and shred.

  4. Return chicken to pan and heat slightly.

  5. Remove from heat and add (if desired) fresh lime juice and fresh cilantro.

  6. Serve with reduced fat sour cream, cheese and baked tortilla chips.
