Recipe Ingredients for WW Blueberry Muffins

2 eggs
1 cup skim milk
1/2 cup canola oil
1/3 cup molasses
1 1/2 cups wheat bran
1 1/2 cups whole wheat flour
2 tsp baking powder
3/4 tsp salt
1/2 tsp. baking soda
2 cups blueberries

Recipe Directions for WW Blueberry Muffins

  1. Beat eggs, milk, oil, molasses and splenda. Stir in bran. Let stand five minutes.

  2. Stir together flour, baking powder, salt and soda.

  3. Add to egg mixture until combined.

  4. Stir in blueberries or cranberries.

  5. Spoon into muffin tins.

  6. Bake at 350 F for 18 to 20 minutes.

  7. ENJOY!!
