Recipe Ingredients for WW Baked Potato Soup

2 Potato medium (2-1/4" to 3-1/4" dia) Potatoes, Russet, Flesh And Skin
1 head, small (4" dia) Cauliflower
12 oz Light and Fat Free Chicken Broth
12 oz 1% Partly Skimmed Milk
4 oz Light Sour Cream
5 serving 2% Milk Reduced Fat Mild Cheddar
3 slice Butterball Bacon Style Turkey
1 tbsp chopped Chives

Recipe Directions for WW Baked Potato Soup

  1. Pierce potatoes with a fork; microwave on high for five minutes. Turn over and cook 3-5 minutes or until tender. Peel potatoes if desired.

  2. Meanwhile, steam cauliflower with water in a large covered pot until tender. Drain and return to pot.

  3. On medium heat, add chicken broth, milk and potatoes and bring to a boil. Use in an immersion blender to puree until smooth. (Or pour into blender and put back in pot)

  4. Add sour cream, half the chives, salt and pepper and cook on low another 5-10 minutes, stirring occasionally.

  5. Remove from heat. Ladle 1 cup into each soup bowl. Top each serving with 2 tbsp cheese, remaining chives and bacon.

  6. ENJOY!
