Recipe Ingredients for ww 1990 vegetable soup

1/4 cup diced onion
2 chicken stock cubes
2 garlic cloves, minced
1 1/2 cups zucchini, thinly sliced
1/2 cup carrot,thinly sliced
1/2 cup tomato, chopped
1 tsp fresh parsley, chopped
1/4 tsp basil
1/8 tsp pepper
2 cups water

Recipe Directions for ww 1990 vegetable soup

Combine onion, broth mix and garlic in saucepan; cook stirring occasionally, until onion is translucent. Add remaining ingredients and stir to combine; cover and cook over low heat, stirring occasionally, for about 10 minutes. Add 2 cups water and bring to a boil. Reduce heat to medium, cover and cook until vegetables are soft, about 20 minutes. Using a slotted spoon, remove 1/2 cup vegetables from saucepan and set aside. Using a hand blender puree remaining soup in pan (if using a regular blender, blend in 2 batches and return pureed mixture to pan); add reserved vegetables and heat.
