Big on taste, but easy as it gets. Chicken legs marinated and roasted.

Recipe Ingredients for Wow Roasted Chicken (Legs)

2 chicken legs - meat and skin

Marinade:
1 tbsp parsley, finely chopped
1/4 tsp salt
1 pinch lemon pepper
1 pinch thyme
1 pinch oregano
1/4 tsp paprika
1 tsp honey
1/8 tsp marmite or vegemite
1 tsp olive oil
1 tsp apple cider vinegar
2 cloves garlic, crushed
3 g ginger, grated
1 pinch turmeric
1 tbsp water

Recipe Directions for Wow Roasted Chicken (Legs)

  1. Mix all the ingredients for the marinade in a small bowl.

  2. Ensure to leave some fat on the chicken as this will help keep the meat moist. You can get rid of it all after roasting by skimming the fat out of the roasting pan.

  3. Coat the chicken well with the marinade. Place in a small roasting pan, cover with aluminium foil and place in fridge for up to 2 hrs.

  4. Preheat oven to 180C. Roast chicken for 15mins, remove foil and turn chicken over skin-side down, baste with pan juices and roast till corners begin to char.

  5. Turn and do same with skin-side up. Remove from oven. Remove chicken from pan, skim off fat, pour over rest of pan juices and serve.

  6. You can allow chicken to rest for 15min. (whilst keeping it warm) to enhance the taste.
