Recipe Ingredients for The World's Best Ratatouile

2 tsp fennel seed, toasted
2 tbsp extra virgin olive oil
2 tbsp garlic, minced (about 3 cloves)
16 ounces eggplant, cut into 3/4 inch dice
8 ounces zucchini, one, cut into 1/2 inch dice
8 ounces yellow squash cut into 1/2 inch dice
4 ounces red pepper, cut into 1/2 inch dice
4 ounces yellow onion, chopped
1/4 cup lemon juice, freshly squeezed from one lemon
14 ounces tomatoes, no salt added, with juice
1 tbsp thyme, dried
1 tbsp balsamic vinegar

Recipe Directions for The World's Best Ratatouile

  1. Chop all vegetables and combine in a large mixing bowl. Add lemon juice and toss to coat.

  2. Place a large spaghetti pot over high heat.

  3. Add fennel seed to the dry pot and toast over high heat until fragrant, about 1 minute.

  4. Add olive oil and swirl pan to coat bottom.

  5. Add garlic and toss to brown (about 15 seconds if that).

  6. Add vegetables and stir well to coat with oil.

  7. Cover and cook until vegetables begin to soften, stirring occasionally, about 10 minutes.

  8. Meanwhile, in a small bowl, combine tomatoes with their juice, red balsamic vinegar, and dried thyme.

  9. Break tomatoes up into bite-sized pieces with either your fingers or the back of a wooden spoon.

  10. Add tomato mixture to the vegetables, and stir well. Reduce heat to medium, and gently simmer until vegetables are tender and translucent (about 25 minutes longer) stirring occasionally.

  11. Season with freshly ground black pepper.

  12. Makes about 6 hefty servings (or 2 quarts)
