This is a vegan dish, but don't let that fool you or put you off. (I'm not a vegan, by the way, and I LOVE "traditional" M&C). This recipe will have you on your knees, begging for more! It's WAY tastier than traditional Mac and Cheese and using whole wheat pasta and soy milk makes it even healthier! The sauce can be made separately and used for dips or poured over popcorn or drizzled over broccoli or brussel sprouts. Be creative and Enjoy!

Recipe Ingredients for World's Best Mac and (not)Cheese

3/4 cup plain soy milk
1/6 cup soy sauce
1/4 cup water
3/4 cup nutritional yeast
1/2 tbsp paprika
1/2 tbsp garlic powder
1/2 tbsp salt
2 oz firm tofu
1/2 cup canola oil
12 oz whole wheat pasta

Recipe Directions for World's Best Mac and (not)Cheese

  1. Cook and drain pasta. Set aside.

  2. Preheat oven to 350 degrees.

  3. Add all ingredients (except pasta) to a blender and blend until liquefied.

  4. Pour pasta into a 13" x 9" baking pan and then pour sauce over it. Stir to distribute sauce.

  5. Bake at 350 for 15-25 minutes (check after 15 minutes) or until it reaches desired creaminess. The longer it cooks, the creamier (but potentially drier) it gets.

  6. Options: Sprinkle 1/2 cup breadcrumbs on top for a bit crispier texture.

  7. Use Whole Wheat pasta for an even healthier meal.

  8. Add mixed veggies for a yummy casserole.

  9. Canned tuna (packed in water) or cooked salmon adds yet another flavor and significant protein (although it negates the "vegan"-ness of the recipe).

  10. Add a dollop of mustard (spicy brown, Dijon or yellow -- your choice) to the sauce.

  11. Although I LOVE garlic and this recipe in no way tastes "garlicy" (to me, anyway), feel free to decrease the amount to taste.
