I adopted these from a Cooks.com recipe for Easy Lemon Bars. I only tweaked eggs/flour and added ginger/lemon peel, but it just takes them to the next level.

Recipe Ingredients for World's Best Lemon Bars. Ever. Period.

1 3/4 cups flour
1/2 cup powdered sugar
5/6 cup butter
5 eggs
1 1/2 cups sugar
4 tbs flour
3 tbs lemon peel
1/2 cup lemon juice
1 tsp fresh grated ginger

Recipe Directions for World's Best Lemon Bars. Ever. Period.

  1. For Crust:

  2. -pre-heat oven to 350 and line 13x9 baking pan with parchment paper

  3. -soften butter, but not to liquid form

  4. -mix first three ingredients w/ kitchenaid or hand mixer until well combined- can still have some butter lumps

  5. -dump into prepared pan and spread out evenly on bottom for crust

  6. - bake in preheated oven for 20 min or until crust is getting very lightly brown on top

  7. For Filling:

  8. - zest and juice at least two nice sized lemons to get peel and juice. I cut up peel into tiny chunks (my zester creates strips of peel, but if you use micro plane grater, zest will be nice texture already).

  9. - you'll need at least 1/2 cup juice, but feel free to be very generous. I always make sure to get as much of the lemon pulp in the juice as well.

  10. - grate or chop ginger into tiny tiny pieces

  11. - pour juice, eggs, zest, sugar, ginger and 3-4 TBS of flour into kitchenaid mixing bowl. I mix for 2-3 min at least on medium and let it just sit around til the crust is done.

  12. - once crust is ready, I mix again for a minute or two and then pour onto hot crust and place in oven for another 18-20 min baking

  13. - if i don't have fresh ginger, sometimes i'll put some sea salt chunks onto the crust before pouring in filling

  14. - bake until top of bars is solid and the filling doesn't jiggle when you move the pan

  15. - remove and cool pan on wire rack. It's then very easy to remove bars from pan due to parchment.

  16. - slice and enjoy

  17. - sometimes I put powered sugar on top too, but no need really unless you want a pretty stencil pattern or something.
