Mushroom, spinach, chicken, and sun dried tomato panini. Served on sourdough bread topped with grilled onions and mozzerella cheese.

Recipe Ingredients for The "Works" Panini

1/2 c frozen spinach
1/2 c mozzarella cheese
1 c cooked mushrooms
2 tbsp sun-dried tomatoes
6 oz cooked chicken
2 slices sourdough bread
1 tsp pepper
1 c cooked onion

Recipe Directions for The "Works" Panini

  1. Cook chicken, spinach, tomatoes and mushrooms in a non stick skillet.

  2. season with pepper.

  3. grill onions in juice from chicken mixture.

  4. lightly toast bread. slice in half.

  5. Place mixture over one half of bread, place cheese on top and top with onions.

  6. put into oven or microwave until cheese is melted.

  7. Makes 2 sandwiches.
