Nice version of potato salad. You can also add thinly sliced green onions and shredded cheddar cheese. Salt and pepper to taste.

Recipe Ingredients for "The Works" Baked Potato Salad

6 yukon gold potatoes
3/4 cup light sour cream
3/4 cup light mayonnaise
60 grams bacon
1/2 cup red onion
1/2 cup celery

Recipe Directions for "The Works" Baked Potato Salad

  1. Preheat the oven to 425. Scrub potatoes and pat dry. Spray potato skins with olive oil and poke holes in them. Bake 50-60 minutes or until tender.

  2. Meanwhile, combine sour cream and mayo. Chop bacon, onion, and celery and add to sour cream mixture. Stir in salt and pepper if desired.

  3. Remove potatoes from oven and cool. Chop potatoes into 1/2 in. pieces. Fold into sour cream mixture. Cover and refrigerate 4-6 hours or overnight.

  4. Garnish with green onions and shredded cheese if desired.
