This started out as a clear clam chowder recipe and turned into fish stew.

Recipe Ingredients for Wooley?s Ultimate Fish Stew

1 lb Salmon
1/2 lb cod, Chilean Sea Bass
1 lb Cod
1 lb cod, Halibut
12 cups fish stock
1 tbls olive oil
12 scallions, sliced
1 cup onion, diced (~1 large)
1 clove garlic, minced
1 1/2 lbs potatoes, white or yellow, diced (4 cups)
2 tbls fresh basil
1 cup celery, sliced (~2 stalks)
1 cup carrots, sliced
1/2 tsp pepper, ground fresh white peppercorns
2 tsp salt, sea
2 tbls fresh parsley

Recipe Directions for Wooley?s Ultimate Fish Stew

  1. Heat olive oil on medium heat in large cooking pot and sauté scallions, onion, and garlic until they soften, about 6 minutes.

  2. Add remaining ingredients, except parsley, and bring to a boil. Turn down to low heat and simmer covered for 15 minutes.

  3. Remove from heat and let stew rest, partially covered, at room temperature for at least an hour or refrigerate for up to two days.

  4. Reheat gently. Adjust the liquid if necessary. Stir in the parsley and season to taste with salt and pepper.
