This is a refreshing Summer side dish that is healthy.

Recipe Ingredients for Wooley's Finest Four Bean Salad

175 g Green Beans (1 1/2 C fresh steamed or 16 oz can)
175 g Wax Beans (1 1/2 C fresh steamed or 16 oz can)
16 ounce Kidney Beans, drained
16 ounce Garbanzo Beans, drained
3/4 c Scallions, sliced (3/4 cup)
1/3 c Red Onion, thinly sliced (1 Tbls)
1/2 c Olives, sliced (1/3 cup)
3/4 c Green Pepper, 1 chopped
3/4 c Celery, sliced 1/4 in thick (2 stalks)
2 T Pimentos, chopped (2 Tbls)
1 pint Grape tomatoes (optional)

Dressing:
1/2 c Red Wine Vinegar
1 T Honey
1 tsp Salt
1/4 tsp Pepper
2 tsp Dijon Mustard
1 clove Garlic
3 T Olive Oil

Recipe Directions for Wooley's Finest Four Bean Salad

  1. Combine Dressing ingredients in blender.

  2. Bring 1? of water in a medium sauce pan to a boil. Add 1 tsp salt and beans. Cook for 4 minutes. Immediately drain and place in an ice water bath.

  3. Add remaining ingredients, cover and marinade, refrigerated, for 4 to 24 hrs.

  4. Alternatively, replace any of the beans above for one below.

  5. Black Eyed Beans (16 oz can)

  6. Northern Beans (16 oz can)

  7. Black Beans (16 oz can)
