Recipe Ingredients for Woody's Garlic Mushroom Chicken

20 oz chicken
6 oz mushrooms
1/2 oz butter
2 cloves garlic
1/2 oz breadcrumbs
1 cup parsley

Recipe Directions for Woody's Garlic Mushroom Chicken

  1. Chop the mushrooms small

  2. Melt butter in the pan and add garlic. Cook for a few seconds, then add the mushrooms. Stir well. Cook for about 10 minutes over medium heat

  3. Preheat oven to 400F

  4. Stir parsley into the garlic mushrooms and season with salt & pepper. Ad breadcrumbs to soak up the remaining liquid. Mix together to form a paste - the stuffing. Remove from the heat and let cool.

  5. Cut deep slit in each chicken breast and insert half the garlic mushroom stuffing into each one. Use a couple of cocktail sticks to close the chicken up, fold the ends over the top and use another cocktail stick to close the parcel.

  6. Transfer the garlic mushroom stuffed chicken breasts to an ovenproof dish, slit side up. Cook for about 25 minutes or until the chicken is done.
