Recipe Ingredients for Wispy Whole Wheat Waffles

1/2 cup whole wheat flour
2 T brown rice flour
2 T ground flax seeds
2 T wheat germ
1 1/2 tsp baking powder (double acting)
1 T cinnamon
1/8 tsp salt
2 T maple sugar
2 egg whites
1/2 cup soy milk
3 T grapeseed oil
1 1/2 T apple sauce
1/2 tsp vanilla

Recipe Directions for Wispy Whole Wheat Waffles

  1. Preheat the oven to 200F. Have the electric waffle iron out and make sure it?s clean.

  2. Combine all the dry ingredients, except the sugar, and mix well; set aside. Combine all the wet ingredients, except the egg whites, and mix well. Set aside.

  3. Plug the waffle iron on while you whip the egg whites. Setting should be at 6-7.

  4. Whip the egg whites with the sugar to a soft peak. Once whipped, add the wet ingredients to the dry and just mix. Fold in the egg whites, but make sure the waffle iron is now ready (the hotter it gets, the better). The batter should be fairly liquidy. Spray the waffle iron only for the first batch. Fill the waffle iron and spread to cover most of the grooves, but not overfull. Cook until the buzzer goes off, or until when you gently try to open the lid, it gives naturally. If it sticks, leave a bit longer.

  5. While you make the batches of waffles, place cooked waffles directly on the oven rack to keep crisp and warm.
