Recipe Ingredients for Wisconsin Soup

3 tbsp Promise light
1/2 cup shallot chopped
2 apples, chopped
1 large potato, diced
19 oz squash soup
1 tsp black pepper
2 cups apple cider
2 1/2 cups grated sharp cheddar cheese
4 oz creme fraiche

Recipe Directions for Wisconsin Soup

  1. Melt Promise in a large pot over medium-low heat and add the onion, apples, and potato.

  2. Season with pepper and cook until the onion is soft, about 8 minutes.

  3. Add the cider and cook over high heat, stirring, until thickened.

  4. Cover and bring to a boil.

  5. Reduce to a simmer and cook, stirring, until the potato is soft, 8 to 10 minutes.

  6. Add the cheese to the soup and stir over medium-low heat until melted.

  7. Puree in a blender in batches until smooth.

  8. Return to pot and heat.

  9. Garnish with a spoonful of the creme fraiche. Serve immediately.
