carrot, potato, turnip, parsnip, limas, onion

Recipe Ingredients for winter warmer soup

1 medium potato
4 cups parsnips
1 large onion
1 1/2 cups soy milk
1/3 cup nonfat yogurt
1/2 cup lima beans
1 tbsp olive oil
2 tbsp ginger
2 tsp salt
1 tsp pepper
1 tsp dill
3 large carrots
5 cups water

Recipe Directions for winter warmer soup

  1. Chop all veggies and add to pot with oil. Add also 1 small turnip (can't be found to include above). Cook until begin to sizzle. Cover and cook 10-15 minutes shaking pot occassionally.

  2. Add water and simmer with lid on 20 minutes until veggies are soft. Puree. Add milk and seasoning (include shake of nutmeg and cloves). Warm.

  3. Just before serving at yogurt so that it doesn't curdle.
