4 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
4 medium Squash, Summer, Zucchini, Includes Skin
1 leek Leeks, (Bulb And Lower Leaf-portion)
3 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 medium raw Onion Red
1 medium (2-1/2" dia) Onions
6 clove Garlic
2 tsp Curry Powder
1 tsp Cumin
1 1/2 tsp Sea Salt

Recipe Directions for winter vegetable stirfry

  1. chop (cubed) all veg add to deep large frying pan

  2. med heat

  3. add all spices and salt

  4. oil option.. i use none

  5. place lid on top

  6. simmer till done

  7. i cook quinoa as a staple for the dish
