Recipe Ingredients for winter vegetable soup

1500 liters water
4 vegetable stock cubes
133 g parsnip, diced
2 carrots, diced
2 leeks, sliced
2 celery stalks, diced
5 tablespoons white wine
100 g pearl barley
2 tablespoons tomato puree

Recipe Directions for winter vegetable soup

  1. make up the vegetable stock, bring it to simmer, add the barley.

  2. Peel and dice the vegetables (approx 15 minutes).

  3. Add the wine and leeks to a covered saucepan, sweat them for about 5 minutes stirring occiasionally to prevent sticking to the pan.

  4. Add the remaining vegetables, sweat for another 5 minutes.

  5. Combine the stock/barley and the vegetables, add the puree and herbs/salt/pepper to taste. Simmer for approx 25 minutes.
