A thick vegetable soup you can make from scratch with fresh and frozen ingredients. This healthy dish is nutrient-rich but dense enough to serve alone as a lunch or light dinner.

Recipe Ingredients for Winter vegetable soup

1 stalk broccoli
1 large carrot
1 onion
1 large potato
1 cup spinach
50 g celery
1 cup sliced tomato or canned tomato
1/2 cup 1% milk
2 egg white
5 cups water
1/2 green pepper
1/3 cup peas
1/3 cup corn
1/4 cup raw brown rice
4 clove garlic
1 teaspoon olive oil
1/4 teaspoon salt

Recipe Directions for Winter vegetable soup

  1. Slice up the raw vegetables into small pieces

  2. Bring 5 cups of water to a boil

  3. Add the carrot, potato, broccoli, celery, and rice to the water

  4. 30 minutes from the start, add the peas, corn and spinach.

  5. Fry the pepper, onions, tomato and garlic for 5-10 minutes and add to the soup.

  6. 60 minutes from the start, add the milk, egg white and salt to the soup.

  7. Remove from stove and serve. Leftovers will last for a week in the fridge
