Recipe Ingredients for winter vegetable soup

440 g onion
75 g celery
225 g carrot
70 g turnip
63 g parsnip
2 stock cubes
100 g frozen peas
240 g Cannelini beans
2 cans tomatoes
750 ml water
1 tbspn olive oil

Recipe Directions for winter vegetable soup

  1. finely chop all vegetables

  2. saute onion, turnip, parsnip, celery and carrot in olive oil

  3. add water and stock cubes and bting to simmer

  4. once vegetables tender add tomatos and peas - bring to a gentle boil, lastly add cannelini beans to just heat through

  5. serve with some freshly ground black pepper
