Variation of a Potato and Leek Soup

Recipe Ingredients for Winter Vegetable Soup

4 cups low sodium chicken broth
1 cup water
1 ounce bacon, chopped
2 cups leeks, diced
1 1/2 cups onion, diced
1 cup celery, diced
2 ounces unsalted butter
16 ounces baby spinach, cut in 1/8 inch strips
1 cup potato, diced
1/4 cup heavy cream

Recipe Directions for Winter Vegetable Soup

  1. Cook bacon

  2. Drain fat

  3. Melt butter in saucepan. Add bacon, leeks, onion,and celery. Cook for 15 minutes.

  4. Add broth, water, and potatoes. Cook for an additional 15-20 minutes until potatoes are tender.

  5. Add 1/2 of the spinach. Simmer for 1 minute.

  6. Put half of the mixture in a blender and puree.

  7. Add pureed mixture back to the pot. Bring back to a slight boil.

  8. Lower temperature. Add rest of the spinach and heavy cream. Heat through. Do NOT BOIL.
