Recipe Ingredients for Winter Vegetable Soup

2 tbsp unsalted butter
1 1/2 cups onion, coarsely chopped
2 tbsp garlic, coarsely chopped
1 tsp cinnamon
1 tsp cardamom
1/2 tsp nutmeg
1 1/2 cups sweet potato, coarsely chopped
2 cups potato (Yukon Gold), coarsely chopped
1 1/2 cups parsnip, coarsely chopped
1 cup celery root, coarsely chopped
2 tbsp sage, coarsely chopped
8 cups low sodium chicken stock
1 cup skim milk
1 salt
1 pepper

Recipe Directions for Winter Vegetable Soup

  1. Heat butter over medium heat in a large pot. Add onion and saute for 5 minutes.

  2. Add garlic, cinnamon, cardamom, and nutmeg and stir for 30 seconds

  3. Add sweet potato, potato, parsnip, celery root, and sage. Stir to combine.

  4. Add chicken stock to pot, cover, and bring to a boil. Lower heat and simmer for about 1 hour or until veggies are soft.

  5. Using a sieve, separate the liquid and solids. Reserve the liquid. Puree solids in a food processor until smooth. Gradually pour the reserved liquid back to the processor to thin the soup. You may have to add some water.

  6. Return soup to teh pot. Add milk and warm through. Season with salt and pepper.
