2 tbsp Corn Oil
13 oz Carrots
3.5 oz Celery
10 oz Sweet Potato
6.25 oz Parsnips
8 oz Potatoes, Baked, Flesh
5 Cube Chicken Stock Cubes
1 medium Squash, Summer, Zucchini, Includes Skin
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1.75 cup Tomatoes Diced
1 Teaspoon Thyme
1 tbsp Parsley, Dried
0.5 tsp Sea Salt
1 tsp Pepper, Black

Recipe Directions for Winter Vegetable Soup

  1. Heat Oil

  2. Add Carrots, Cabbage, celery and parsnip 10-15 minutes

  3. Add the stock

  4. Add the rest

  5. Boil and cook until potatos are sone
