Adapted from a recipe on allrecipes.com. A good vegetarian hash to serve with eggs or tofu scramble.

Recipe Ingredients for Winter Vegetable Hash

2 tbsp olive oil
1 medium onion, finely chopped
4 cloves garlic
1 pound potatoes (Yukon gold)
1 acorn squash, diced
1 cup kale, chopped
1/2 pound shitake mushrooms, diced
1 red bell pepper, diced
2 tbsp fresh sage, chopped
1 tbsp fresh rosemary, chopped

Recipe Directions for Winter Vegetable Hash

  1. Saute onions and garlic in the oil.

  2. Add the potatoes, squash, kale, and mushrooms. Cook on medium, stirring frequen until the potatoes are almost tender. Add small amounts of water as needed during cooking to prevent sticking.

  3. Add the bell pepper, sage, and salt and pepper to taste. Continue cooking until the potatoes are tender.
