A hearty soup of root vegetables and stock

Recipe Ingredients for Winter Vegetable Broth

8 oz swede, peeled and diced
12 oz carrot, peeled and diced
8 oz celery, chopped small
1 onion, chopped
1 tablespoon olive oil
4 oz cabbage (or spring greens), shredded
2 oz green lentils
1 tablespoon parsley
3 pints (vegetable or chicken) stock
1 salt and pepper (and some bayleaves)

Recipe Directions for Winter Vegetable Broth

  1. Heat the olive oil in a large saucepan and add all the root vegetables and onion. Stir to coat, put the lid on the pan and allow everything to sweat for about 10 minutes

  2. Add the lentils, spring greens, 3 - 4 pints of stock, parsley, seasoning and three bayleaves.

  3. Simmer for about 30 minutes until the lentils are tender

  4. Check the seasoning and serve
