I love to serve this stew on cold nights with crusty whole-grain bread and lightly cooked vegetables for a warming easy-to-make meal."

Recipe Ingredients for Winter Vegetable-Bean Stew

0.33 tbsp Olive Oil, Extra Virgin
1 medium raw Leeks
15 1/10 grams Whole Wheat Pastry Flour
3 3/10 g Kombu
1 cup, cubes Squash, Winter, Butternut
1 medium raw Sweet Potato
2 medium Carrots
1 cup, cubes Turnips
2 sliced raw Parsnip
1 cup Cauliflower
5 serving Vegetable Cooking Stock
3 tsp Vegetarian Organic Mellow White Miso Soybean Paste

Recipe Directions for Winter Vegetable-Bean Stew

Heat olive oil in a soup pot over medium-low heat. Add leek and cook 2 minutes. Slowly stir in flour and cook, stirring constantly, until leeks are coated. Add kombu, squash, sweet potato, carrots, turnip, parsnips and cauliflower and gently add stock. Bring to a boil. Reduce heat to low, cover and cook 35 to 40 minutes. Remove a small amount of broth, add miso and stir until dissolved. Stir mixture into soup. Add beans and broccoli and simmer until broccoli turns bright green, about 4 minutes.
