Spaghetti squash with chicken ciatorre

Recipe Ingredients for winter squash

5 cups spaghetti squash
6 plum tomatoes
6 garlic cloves
2 medium onion
2 yellow bell pepper
1/4 cup black olives
1 oz romano cheese
1/4 tsp salt
3 tbsp light olive oil
3 chicken breast

Recipe Directions for winter squash

  1. Slice three average sized spaghetti squash lengthways and remove seeds, Place on pan cut side down. Cook in a preheated 350 degree oven for roughly 45 minutes.

  2. While the squash cook, cut up chicken breast(cubed)onion, pepper, garlic and cook over medium high heat until onions are transparent, add tomatoes and olives and simmer for about 20 minutes on medium heat.

  3. When the squash is done, using a fork strip out the inside of the squash if it is cooked properly it should look like spaghetti.

  4. Place portion of squash on each plate and spoon over the chicken and tomatoes mixture, sprinkle with grated romano and salt and pepper to taste.
